First, fill a glass with ice and add cold tap water. Stir the mixture and leave it for three minutes until the temperature becomes stable, ready for testing. Put the thermometer in the mixture, with the probe at least two inches under water, not touching the sides. Stir, wait thirty seconds — it should read zero degrees Celsius or thirty-two Fahrenheit. Adjust the calibration nut if needed. Next, heat water in a deep saucepan to a rolling boil. Place the thermometer's stem two inches under water, wait thirty seconds until stable — it should show one hundred degrees Celsius or two hundred twelve Fahrenheit. Adjust the calibration knob until correct.
